Today, at our last line dance class of the session, I offered you some homemade treats. You all asked for the recipes. Enjoy!

Flourless Almond Ginger Cookies

Preheat oven to 350′. Line cookie sheets with parchment paper.

3/4 cup of almond flour ( It is only ground up almonds, nothing else added)

1/3 cup maple syrup

2 tbsp coconut palm sugar ( or brown sugar)

1 tsp ground ginger

Stir all of the ingredients together and then drop by spoonfuls onto the cookie sheet. Press down with a fork. Bake for 10-15 minutes or until brown.  I like these cookies to be crunchy but you can cook them less for a chewy cookie.


Flourless Oatmeal Squares (Based on Shelley’s recipe)

Preheat oven to 350′. Grease at 9×9 baking pan.

1/2 cup of butter

1/2 cup brown sugar ( I use coconut palm sugar)

1 tsp pure vanilla

2 tbsp corn syrup ( I have used maple syrup also)

Melt the above ingredients over medium heat. Mix well. Remove from the heat and stir in:

2 cups of Gluten Free Oats

1/2 tsp salt ( I use sea salt)

Mix well and then press into the prepared pan.

Bake for 25-30 minutes until bubbly and brown.

Let cool slightly and cut into squares.
