Here are a few recipes that I make often. I hope you enjoy them as much as I do.

Green Smoothie

I use organic spinach in leaves ( not the cubes).

1/2  cup frozen spinach or 1 cup fresh spinach

1/2 cup frozen mango chunks

1/2 a ripe banana or a bit more if you like

1/2 an orange peeled with seeds and skin removed but I usually use 1/2 cup of orange juice

1/2 cup of coconut water ( I use Coconut Dream beverage unsweetened)

1/2 cup or more of water depending on how thick you like it

Blend it all up and then you can add:

2 tbsp hemp seeds if you want extra protein.  ( I buy Manitoba Harvest)

Blend only for 30 seconds longer to preserve the nutritional value of the seed

Add as much water as you feel you need to get the right texture.


Energy Bites

1 cup oatmeal

1/2 cup chocolate chips

1/2 cup peanut butter

1/2 cup ground flax seed

1/3 cup honey

1 tsp vanilla

1/2 cup of unsweetened coconut

Mix all of the ingredients together in a big bowl, roll into little balls.


Orange Cookies

1/2 cup of butter softened

1 cup of granulated sugar

2 eggs

1 tbsp freshly squeezed orange juice or 1 tsp orange extract

1/4 cup of milk

1 1/2 cups GF flour ( I use Bob’s Red Mill 1 to 1 Baking Flour) * use 1 cup if using regular flour

1 tsp baking powder

1 1/2 tbsp grated orange rind

1 cup raisins

Dash of salt

Grease the cookie sheets or use parchment paper.

Mix together the dry ingredients and set aside. Cream the butter and sugar together. Add the eggs one at a time, beating well. Add the orange juice and the milk. Add the dry ingredients. Mix well and drop by spoonfuls. Bake at 375’F for 8-10 minutes.


Oatmeal Bars

1/2 cup of butter

1/2 cup of coconut palm sugar

1 tsp vanilla

2 tbsp corn syrup

2 cups of GF instant oats

Dash of salt

Mix all of the ingredients together in a saucepan over low heat. Spread into a greased  9″x9″ baking pan.

Bake at 325’F for 20 minutes


Molasses Ginger Cookies

1 1/2 cup of almond flour

2 tbsp coconut oil softened

1/4 cup of maple syrup

1 tbsp of molasses

2 tsp of ground ginger

1/8 tsp salt

1/4 tsp baking soda

Mix all of the ingredients together. Roll into balls, press with a fork and bake at 350′ for 8-10 minutes.


Sour Cream Coffee Cake

  • I use a 9″x9″ baking pan to get a higher cake but you can use a 13″x9″

1/2 cup of butter softened

1 cup of sugar

2 eggs

1 cup of sour cream

1 tsp vanilla

2 cups of GF flour ( I use Bob’s Red Mill Baking Flour 1-1)

1 tsp baking powder

1 tsp baking soda

1/4 tsp salt

Topping – Blend together

1/3 cup brown sugar

2 tsp cinnamon

1/2 cup walnuts

Cream butter and sugar together until fluffy. Beat in eggs, sour cream and vanilla. Combine dry ingredients ( flour, salt, baking powder and baking soda) and add. Mix well.

Pour half of the mixture into the pan and then top with half of the topping. Add the remaining batter. Finish with the topping.

Bake at 325’F for 40-50 minutes or until toothpick inserted in the center comes out clean!
